Like I said, regular cooking rice wine would be fine. I just grabbed the first thing in my cupboard that would keep the food from burning, and the mirin was in front of the Chinese rice wine. XD And ouch at that price!

As for other substitutions, strips of chicken would probably work really well instead of hanpen.

I love oyster sauce, but I think it would overpower the cardamom in this. A little of it goes a long way...

Also, I forgot to list the ginger in the ingredients. I'll edit it when I upload a picture! ^_^;;;
