I never knew cooking spinach could be such a pleasant experience. It starts out crunchy, raw and yucky and before your very eyes, it crinkles up, mellows and starts producing that wonderfully bitter aroma. It's funny how I can like things that I can't objectively describe as tasting good (Swiss cheese, fiddle head greens, spinach) so much. Bright greens in a meat and tomato sauce look so delicious, just as the bright green vegetables in Crispin Crispian's soup always did.
Tomorrow, cornstarch in the sauce. Cornstarch is my newest friend. Everybody, meet Cornstarch!
